For Friday, June 17th CSA Week #4:
The return of cool weather has slowed growth on the farm.
Itʼs as if the whole organism needs to hesitate and catch itʼs
breath before the advent of real summer.
As we walk the farm day after day and just observe,
we can almost feel the ebb and flow of energy all around us.
This pause - before the next surge - is effected by
temperature changes, light quality, day length, wind and rainfall.
We weed and water, we wait and watch,
then we plant and tend the next succession.
So this week weʼre offering just a medium (#2)
sized $20.00 box with 3 generously portioned
items plus a pint of strawberries & an expanded
a la carte list from which to choose.
Wilted Kale with Bacon, Vinegar & Maple Syrup
3 or 4 bacon slices, cooked until crisp
!/2 - 3/4 C sliced red onion
About 8 C stemmed and chopped Kale
About 2/3 C chicken stock
About 1Tbsp your favorite vinegar
About 1Tbsp maple syrup
Pepper to taste
" Cook bacon, remove from pan and crumble. Saute onion in bacon drippings,
add Kale an saute until it begins to wilt, stirring occationally. Add stock, cover and
cook until tender. Stir in vinegar and maple syrup, sprinkle with crumbled bacon
and pepper - and enjoy.
